Sooo two things. First of all, I’ve been on a grain free diet for a few months now and I’m absolutely loving it honestly! It’s sounds horrible I know but I have some fitness goals I’m trying to accomplish so a girls gotta do what a girls gotta do. I recently watched the New Girl episode where Coach and Winston were making crepes, and I’ve been craving them ever since.
I love carbs. Probably more than the average person. So when I decided to cut out grains for the time being I had to figure out ways to still feel like I was eating the foods that I wanted. Substitutes aren’t as hard as everyone makes them out to be. It just takes the time to make them. However what I loved about this recipe was that it was insanely simple. I got it off of Pinterest from this amazing French woman who took the time to find a substitute that tasted as close to the real thing as possible. I’ll link her page here (she also has low carb and low sugar fillings for you to try with the crepes!).
Let’s get to it people.
1/4 cup of Almond Flour
1/2 teaspoon of vanilla extract
1/4 of ground cinnamon (this step is optional and I chose to skip it for my first round of crepes)
Coconut oil to grease the pan (I didn’t have coconut oil on hand so I used avocado oil instead and it honestly tasted totally fine!)
**This makes me around 4-6 crepes each time
Combine almond flour, vanilla extract, eggs, and cinnamon in a bowl and whisk until there are no lumps in the batter.
Get a 10 inch non stick pan and put a bit of oil in the center. Then take a paper towel and spread it around to cover the whole pan.
Heat your pan up to medium heat (I did end up lowering the heat towards the end. The gas stove got a bit too hot).
Put 1/4 cup of batter in the center of the pan and tilt the pan with a circular motion until the batter is spread out as even as possible.
Once the edges get a bit crispy, gently lift and flip the crepe to cook the other side.
Repeat these for the rest of your crepes :)

So Carine has some AMAZING sounding fillings on her blog which I’ll link again here. I didn’t have any of her suggestions on hand so here is the filling I put together:
Greek yogurt — just one or two spoonfuls
Blueberries and sliced strawberries
Drizzle of honey
A squeeze of fresh lemon juice
**And if you want to spruce it up a little adding some chopped mint leaves pairs very well!
